Professional Italian ovens for pizzerias and restaurants change over time thanks to new solutions in the field of refractory materials. A traditional wood-fired pizza oven consists of double dome creating air space that maintains the heat. The domes are made of refractory bricks or stones and must be stable. The dimensions of the base and opening of the oven are precisely determined: the opening is 45/50 cm wide and 22/25 cm high and the base of a traditional Neapolitan oven has up to 150 cm in diameter. It is not advisable to build an oven with a larger diameter because this would not always allow for simultaneous baking of six pizzas. The oven base is always divided into 4 conical parts. The wood used for baking Neapolitan pizza must not produce smoke or smell that changes its aroma (oak, ash, beech and maple tree).

Each wood-fired pizza oven, in accordance with the Neapolitan tradition, is designed entirely from natural materials with simultaneous application of original solutions within the scope of heat accumulation. Due to its form as well as use of appropriate components – reaching the optimal temperature of 430 – 480 °C with low wood consumption is not a problem. In the planning and construction process, the oven was designed in such a manner that it will not cause any problems in transport and use for future users.
